Peach & Honey Cake (GF)

Treat yourself to a slice of sunshine with Peach & Honey cake. It's gloriously soft, sweet and delicious. It's a simple recipe but I guaruntee this cake is an absolute crowd pleaser. This cake is perfect for Summer gatherings in the garden, picnics or even a fun twist on an afternoon tea.

Serves 6-8
Ingredients:
4 fresh peaches
2 tbsps honey
190g glute free self-raising flour
150g caster sugar
60g butter
50ml vegetable oil
120ml milk
1/2 tsp baking powder
Method
Preheat your oven to 180C.
Add the butter and sugar to a mixing bowl and mix until well combined and creamy.
Fold in the eggs, oil, milk and honey until completely smooth.
Fold in the flour and baking powder to the wet mixture, try not to over mix this batter.
Add some greaseproof paper to a 6 inch cake tin. Don't worry about cutting the baking paper to size, we want this to look rustic with rougher edges. Add in the cake mix and layer sliced peaches on top.
Bake at 180C 40-45 minutes until golden brown or until it's fully cooked in the centre.
Leave to cool fully before serving.
This cake is perfect with an iced latte, cup of tea or even a big scoop of ice cream. I guaruntee this recipe will be a staple in your household this Summer!
Will dairy free milk work in this recipe?
I always bake with almond and oat milk and the cakes come out perfectly every single time! Oat milk would add the perfect creaminess to this recipe.
Can I use a different fruit?
Using different fruit will absolutely be delicous with this cake. You may have to watch the cake a little bit while it's baking as certain fruits have different water contents or take longer to cook. Raspberries, oranges and rhubarb would be lovely!
Can this cake be frozen?
I love freezing my cakes and cookies because you can always have a sweet treat on hand. I recommend slicing the cake into slices and freezing them seperately. This just makes it easier to reheat.
