Bacon and Leek Quiche Recipe!

So this week is coeliac awareness week. I want to show people that you can still eat similar foods to everyone else just tummy friendly! So here is my recipe for my bacon and leek quiche. This can easily be made dairy free and low fodmap too!

Ingredients:
100g butter
200g plain flour (I use doves farm)
3 Rashers of bacon
2 Leeks
2 tsp garlic (I used lazy garlic)
Two large handfuls of spinach
50g Cheese (I used cheddar)
3 Eggs
3 tbsp of creme fraiche (or cream if preferred)
Salt and Pepper
Thyme, Basil and chives
Method:
1. Grease your tart tin and preheat your oven. Sieve the flour into a bowl, rub the butter into the flour using your hands until it looks like breadcrumbs. Add water slowly until it comes together into a dough. Wrap it in cling film and leave it to rest in the fridge for 20- 30 minute whilst you cook your filling.
2. Chop your leeks and bacon and fry them along with your garlic in a pan. Cook until golden brown and add the spinach and cook until it wilts. Add in some salt, pepper, thyme, basil and chives. I also added a pinch of paprika last minute.
3. Mix your eggs with the creme fraiche and cheese. Season again with salt and pepper then add the leeks, bacon and spinach to the egg mixture and set aside.
4. Roll out your dough (I rolled it out onto some greaseproof paper to flip it into the tin). I patched up any rips or holes I created and put it in the oven for a few minutes until the base has hardened slightly. Add your egg mixture and then cook for around 12-15 minutes until golden brown.

5. Let it cool, take it out of the tin, slice and enjoy. I just at mine with a simple salad! So delicious and you can easily change up the ingredients anytime you want! I will try a broccoli and stilton quiche next *heart eyes*.
